- Looking for a perfect gnocchi recipe to show off your new pasta board?
- Here is the Oh N!ce ol' faithful gnocchi recipe that always hits the spot.
- Serves 4
- 1000g Large Potatoes, washed
- 150g Plain flour, sifted
- 60g Parmesan cheese, grated
- 3 Egg yolks
- 55ml Olive oil
- Salt and Pepper to taste
- Preheat the oven to 180 deg.C
- Place potatoes on baking tray, prick the potatoes, and bake for 70-90min or until soft
- Remove the potatoes from the oven cut in half and scrape out the flesh and pass the potatoes through a sieve
- Weigh out 550g potato puree and place in a large bowl.
- Add the flour, Parmesan, egg yolks and oil and work into a dough. Season to taste
- Turn out the dough on a lightly floured workbench and knead for 3 minutes. If the dough feels wet, add more flour. The dough should be firm yet soft
- Roll a handful of dough into a ball and using your gently roll out the dough into tubes roughly 2 cm in diameter. Repeat until all the dough is used up.
- Cut the gnocchi into 3 cm lengths and using your thumb gently press and roll the gnocchi on your Oh N!ce board
- Bring a large pot of salted water to the boil and cook the gnocchi in several batches. Simply drop the gnocchi into the water and wait for them to float to the surface.
- Lift them from the water and serve immediately. Serve with the sauce of your choice and a delicious salad on the side.
